Description

  • 6 cups chicken stock
  • 2 jalapeno pepper chopped
  • 2 chili peppers diced
  • 1 1/2 teaspoons oregano
  • 2 teaspoon cumin
  • 1/2 teaspoon cayenne pepper
  • 1 tablespoon vegetable oil
  • 6 cups chicken diced, cooked
  • 1 cup salsa
  • salt to taste
  • black pepper to taste
  • sour cream (garnish)
  • Monterey jack cheese garnish, shredded

Instructions

  1. Simmer the beans, 3/4 cup onions, and 1/2 teaspoon garlic in the chicken stock for 2 hours, or until the beans soften, stirring frequently.
  2. Sauté the peppers, spices, and the remaining onions and garlic in the oil.
  3. Add the sauteed peppers and onions to the chili.
  4. Add the chicken and salsa to the chili. Stir to combine.
  5. Simmer for one more hour, and season with salt and pepper to taste.
  6. Garnish each bowl with sour cream and shredded Monterey Jack cheese.
