This Salmon and Lemon Dill Rice recipe combines tender, flaky salmon with a light and zesty rice infused with the fresh flavors of lemon and dill. It’s the perfect balance of hearty and refreshing, offering a quick meal that is filling and nutritious!

Ingredients
Salmon:
- 1 lb. skinless Atlantic salmon cut into bite size pieces (¾-1-inch)
- 2 tsp brown sugar
- 1 tsp each: salt, garlic powder, sweet paprika, smoked paprika
- 1/4 tsp black pepper
Rice:
- 2 cups vegetable broth low sodium
- 1/2 tsp salt
- 1 clove garlic minced
- 1 cup long-grain rice (180g)
- 1 Tbsp lemon zest from 1 lemon
- 2 Tbsp fresh dill chopped
- 1 Tbsp unsalted butter (14g) 14g
Optional for serving:
- pita bread
- tzatziki store-bought or homemade
- mixed greens
Instructions
For the rice:
- Add the broth, salt and minced garlic to a small pot. Bring to a boil then add the rice, reduce heat to low and cover. Simmer, stirring occasionally until all liquid is absorbed, 18-20 minutes. Remove from heat and stir in the lemon zest, dill and butter.
For the Salmon:
- Whisk the brown sugar, salt, garlic powder and both paprikas in a small bowl. Set aside.
- Pat salmon bites dry with a paper towel and place in a bowl. Spray salmon bites with a little cooking spray then sprinkle with the seasoning mix and toss to coat.
- Spray air fryer basket with cooking spray. Add the salmon bites in an even layer and cook for about 10 minutes, until the salmon flakes easily with a fork. Shake/toss halfway through.
To serve:
- Garnish with lemon zest and cracked black pepper. Serve with warmed pita chips and tzatziki, or any dip/sauce that sounds good, and enjoy!

- : To thaw, you can put frozen salmon in the refrigerator overnight. Or, place the frozen piece of salmon in a sealed bag in a bowl of cold water and let it sit for 30 minutes, or until thawed.
- : This will ensure the cooking oil, and therefore the seasoning, sticks to the salmon well and doesn’t run off from the excess water. Which helps lock in the moisture and also ensures max flavor.
- To ensure that salmon bites cook evenly, be sure to cut into even 1-inch cubes. Also, be sure to shake the air fryer basket (or flip bites if using an air fryer with a tray) halfway though.
- Make sure not to overcook the salmon cubes as this can turn the salmon dry.
- Use fresh lemon and dill to give this recipe the best flavor! You can use dried dill as needed (sub 2 teaspoons of dried dill for the fresh dill) but I highly recommend using fresh for the best flavor!
