Salmorejo is a traditional thick soup-cum-sauce from Spain, from the Cordoba region of Andalusia, made with tomato and garlic, decorated with Serrano ham and hard-boiled egg.

Ingredients
- 2½ lbs pear tomatoes (or elongated tomatoes), peeled, seeded, and chopped
- 7 oz white bread
- ½ cup extra virgin olive oil
- 2 cloves garlic , crushed
- 1 teaspoon salt
For the topping
- 1 large hard-boiled egg , finely chopped
- 3 tablespoons diced Serrano ham
- 2 teaspoons olive oil
Instructions
- Place the chopped tomatoes and garlic into a mortar, and crush with a pestle, until smooth.
- Add the bread, half of the olive oil and salt, and mix.
- While very gradually incorporating the rest of the olive oil, grind for at least 10 minutes, until you obtain a homogeneous and smooth paste.
- Pour the mixture into a serving bowl, cover with cling film, and place in the refrigerator for at least 1 hour.
- Top with serrano ham, hard-boiled egg and olive oil.
