Description
This Salsa Roja recipe brings together fresh tomatoes, onion, jalapeño pepper (with seeds removed for mildness), garlic, and salt blended with water into a smooth sauce. The mixture is heated with neutral cooking oil and chicken bouillon paste to develop flavor and reduce excess liquid, resulting in a thickened, richly flavored salsa.

Ingredients
- 4 tomato
- 1/2 onion
- 1/2 jalapeno pepper seeds removed if you want a mild salsa, fresh
- 1/2 teaspoon salt , more if needed
- 1 clove garlic
- 1 cup water
- 1 teaspoon neutral cooking oil generic cooking oil
- 1 teaspoon chicken bouillon paste (or cube)
Instructions
- Blend: Add tomato, onion, jalapeño, salt, garlic and water to a blender or food processor and puree.
- Simmer: Heat oil in a large skillet over medium high heat. Add salsa to the pan and stir in chicken bouillon. Bring mixture to a low boil and cook, stirring occasionally, for about 10 minutes, or until a lot of the liquid has been reduced.
- Allow to cool. Store in the fridge for up to 5 days.
Notes
- Adjust the heat level by including or removing jalapeño seeds to suit your preference.
- Store salsa refrigerated and consume within 5 days for best freshness.
- This salsa pairs especially well with pupusas and curtido for traditional serving.
