Sauteed Broccolini

Sauteed Broccolini showcases tender, brightly colored broccolini cooked until fork-tender then lightly charred with garlic and olive oil. The simple seasoning allows the mild, slightly sweet flavor of the broccolini to stand out with a subtle smoky touch from the brief browning. This vegetable side is practical for complementing a variety of main dishes, adding a cooked green option that's easy to prepare on the stove.

Description

Sauteed Broccolini involves trimming and cleaning the stalky ends and leaves before steaming the broccolini gently in water in a covered pan until bright green and tender. Then the water is evaporated while cooking, and the broccolini is pushed aside to quickly cook diced garlic in olive oil to infuse the dish with a savory aroma. Finishing with a bit of salt brings out the natural flavors. The light char adds complexity without overpowering the vegetable's texture or taste.

The flavor is mild and slightly vegetal, with tender stalks and crisp crowns, enhanced by the warm garlic and olive oil layers. The quick pan cooking maintains a fresh quality with slight smokiness from the charring. Sauteed Broccolini pairs well with roasted or grilled meats and fish, or can be served simply as a healthy side.

This recipe works well for a straightforward vegetable side at lunch or dinner. It requires just a handful of common ingredients and minimal active time, making it accessible for preparing fresh greens that retain texture and flavor without complicated preparation.
