Sautéed Mushrooms and Onions
Description
This recipe begins by heating extra virgin olive oil and unsalted butter in a skillet over medium-high heat. Mushrooms are added first and sautéed undisturbed for 4 to 5 minutes to develop a browned exterior and deepen their flavor. Then, sliced sweet yellow onions, minced garlic, dried thyme, salt, and freshly ground black pepper are added to the pan.
The mixture cooks for another 6 to 7 minutes over medium heat until both mushrooms and onions are tender and nicely caramelized. This slow cooking enhances their natural sweetness and umami character.
The sautéed mushrooms and onions can be served as a versatile side dish alongside meats, grains, or vegetables, or included in sandwiches and omelets. Their rich flavor and soft texture make them a useful addition to many recipes.
Options for substitutions include using other herbs like Italian seasoning, basil, or herbes de Provence, and adding bell peppers to enhance flavor and color. - 2 tablespoons extra virgin olive oil

- 1 pound brown mushrooms sliced, or white mushrooms
- 1 large onion sliced, sweet yellow
- 2 cloves garlic minced
- 1/2 teaspoon kosher salt
- 1/2 teaspoon black pepper freshly ground
- 1/2 teaspoon thyme dried
Instructions
- Ad the olive oil and butter to a large skillet set over medium-high heat.
- Add the mushrooms to the pan, stir and saute for 4 to 5 minutes without disturbing.
- Reduce the heat to medium and add the onion, garlic, salt, pepper and thyme. Cook for an additional 6 to 7 minutes, or until the mushrooms and onions are soft and nicely browned.
- Season with salt and pepper to taste and serve as desired.
Notes
- Dried thyme can be substituted with Italian seasoning, basil, or herbs de Provence.
- Add diced bell peppers during cooking for additional flavor and texture.
