Scalloped Corn Casserole

Scalloped Corn Casserole combines whole kernel corn with a custard base of eggs and milk, thickened with crushed crackers and flavored with melted butter, grated onion, sugar, salt, and pepper. Baked until set, it yields a creamy, tender casserole with a mild sweetness and subtle crunch from the crackers.

Description

This Scalloped Corn Casserole recipe mixes eggs and milk with crushed saltine or butter crackers to create a binding custard. Two drained cans of whole kernel corn add sweetness and texture, while melted butter, salt, pepper, sugar, and freshly grated onion contribute rich and balanced flavors.

The mixture is poured into a greased 8x8 inch dish and baked at 350ºF for about 40 minutes, or until the center is set. The result is a creamy yet textured casserole that holds its shape when sliced.

Typically served as a side dish, this casserole fits well with a variety of main courses. Leftovers can be stored in an airtight container in the fridge for a few days. Calorie estimates vary depending on ingredients used.
