Schiacciata alla Fiorentina

Schiacciata alla Fiorentina – a very simple and moist cake typical of the city of Florence and usually eaten for Mardi Gras. This cake is amazingly soft and its characteristic yellowish colour is given by the orange juice and zest used in the batter.

Ingredients

  • 200 gms plain flour 1 ½ cup + 1 tbsp
  • 2 egg
  • 130 gms granulated sugar
  • 50 ml extra virgin olive oil 3 1/2 tbsp
  • 50 ml milk or soy milk, 3 1/2 tbsp
  • juice and zest grated of 1 orange
  • 16 gms baking powder 4 tsp
  • 1 pinch salt
  • 1 tsp vanilla extract
  • icing sugar to decorate
  • cocoa powder to decorate

Notes

  • I made a template of the Florentine Lily by printing one from the web and cutting it out. Very easy. The Florentine Lily (which in reality is more of a stylised iris) is the symbol of Florence.
