Ingredients

  • 1 ripe banana
  • cup rolled oats
  • 1 large egg
  • 1 tsp chia seeds
  • ½ tsp vanilla
  • cinnamon for sprinkling
  • yogurt fresh berries, nut butter, a drizzle of honey and chia seeds, toppings of choice

Instructions

  1. Using a fork, mash the banana in a shallow bowl or plate.
  2. Add the remaining ingredients to the mashed banana and mix until combined.
  3. Grease a non-stick skillet with a little avocado or olive oil and warm over medium heat. Once warm, add the oatmeal mixture and cook until bubbles appear. Then using a spatula, flip and break the mixture into pieces.
  4. Serve with yogurt of choice, fresh berries, a drizzle of nut butter, honey and chia seeds.
