Ingredients

  • 8 ounces whole wheat spaghetti or linguine
  • 2 1/2 tablespoons low-sodium soy sauce
  • 4 teaspoons rice vinegar
  • 1 tablespoon toasted sesame oil
  • 1 1/2 teaspoons smooth peanut butter
  • 2 teaspoons honey plus more to taste
  • 1 teaspoon Sriracha optional
  • 2 cloves garlic minced
  • 1 teaspoon fresh ginger minced
  • 3 green onions sliced
  • 1 tablespoon toasted sesame seeds

Instructions

  1. Cook the noodles according to the package instructions until al dente.
  2. In a bowl, whisk together the soy sauce, rice vinegar, toasted sesame oil, peanut butter, honey, sriracha (if using), minced garlic, and minced ginger until smooth. Add more honey if needed to balance the sweetness.
  3. After the noodles cook, drain them and rinse them under cold water to stop the cooking process.
  4. In a large bowl, toss the cooked noodles with the sauce until they are evenly coated.
  5. Top the noodles with sliced green onions and toasted sesame seeds.
