Ingredients
For the Salad
- 1 ½ pounds Brussels sprouts
- ⅔ cup fresh raspberries
- ½ cup fresh parmesan cheese flaked
- ⅓ cup slivered almonds toasted
For the Dressing
- ⅓ cup olive oil
- 3 tablespoons apple cider vinegar
- 1 ½ tablespoons sugar-free maple syrup
- 2 teaspoons Dijon mustard
- ½ teaspoon dried thyme
- 1 clove garlic grated
- ¼ teaspoon salt
- ¼ teaspoon ground black pepper

Instructions
- Add all the dressing ingredients into the bowl of a mini chopper, immersion blender or food processor.
- Blend until well combined and emulsified, then set aside while you assemble the salad.
- Wash, dry and remove the outer leaves of your Brussels sprouts. Then shave them as thin as you can get them. The best way to achieve this is using a mandolin slicer. If you don’t have a mandolin, you can use a sharp knife or food processor with the slicing blade. I cannot stress enough that you want them shaved, not just shredded.
- Add the Brussels sprouts to a large bowl.
- Take a wedge of parmesan cheese and using a sharp knife, flake off random shards. Add them to a bowl along with the raspberries and toasted slivered almonds.
- Pour the dressing over the top and toss to combine. Allow the salad to sit for at least 20 minutes before serving.
- Store leftovers in an airtight container for a few days in the fridge.
