Description
This recipe assembles ham steaks coated with a glaze of apricot preserves, Dijon mustard, apple cider vinegar, and fresh rosemary, seasoned with salt and black pepper. Sweet potatoes pierced and microwaved until tender are halved and topped with butter, mini marshmallows, and chopped candied pecans. Green beans are tossed with olive oil, minced garlic, salt, and pepper.
The ham and sweet potatoes are arranged on one baking sheet, and the green beans on another, then baked at 400°F until the marshmallows brown gently and the green beans are tender. The sweet potatoes provide soft, sweet, and buttery contrast with a crunchy pecan topping, while the ham offers savory, herb-infused meatiness. The green beans add a garlicky freshness and light crispness.
Optionally, flaky biscuits can be baked alongside during the last minutes for a complete holiday-style meal served hot and fresh from the oven.
Ingredients
For the ham
- 2 tablespoons apricot preserves
- 1 teaspoon Dijon mustard
- 1 teaspoon apple cider vinegar
- ½ teaspoon rosemary finely chopped fresh
- kosher salt to taste, freshly ground
- black pepper to taste, freshly ground
- 3 (8-ounce) ham steaks cut
For the sweet potatoes
- 6 sweet potatoes small to medium
- 3 tablespoons butter cubed, unsalted
- 1 ½ cups mini marshmallows
- ½ cup pecans chopped, candied
For the green beans
- 1 pound green beans trimmed
- 1 ½ tablespoons olive oil
- 3 cloves garlic minced
- salt to taste, Kosher salt and freshly ground
- black pepper to taste, Kosher salt and freshly ground
For the biscuits (optional)
- Biscuits flaky Mile High
Instructions
- Preheat oven to 400 degrees F. Lightly oil two baking sheets or coat with nonstick spray.
For the ham
- In a small bowl, whisk together apricot preserves, Dijon, vinegar and rosemary; season with salt and pepper, to taste.
- Place ham steaks onto one side of the prepared baking sheet, slightly overlapping. Brush evenly with apricot preserves mixture.
For the sweet potatoes
- Pierce sweet potatoes with a fork; place into microwave for 8-10 minutes, or until tender. Cut the potatoes down the center lengthwise, top with butter, marshmallows and pecans.
- Place sweet potatoes onto the opposite side of the ham steaks in a single layer.
For the green beans
- Place green beans in a single layer onto the second prepared baking sheet. Add olive oil and garlic; season with salt and pepper to taste. Gently toss to combine.
- Place into oven and bake until the marshmallows just start to brown and the green beans are tender, about 20-25 minutes. Add biscuits during the last 3-5 minutes of cooking time, if desired.
- Serve immediately.
