Shrimp Egg Foo Young (鲜虾芙蓉蛋)

Shrimp Egg Foo Young is a Chinese-style omelette made with cooked shrimp, bean sprouts, and green onions, pan-fried until golden brown. The patties are topped with a sweet and tangy sauce made from chicken broth, ketchup, soy sauce, rice vinegar, sugar, and cornstarch, adding a glossy finish and balanced flavor to the savory eggs.

Description

Shrimp Egg Foo Young blends beaten eggs with chopped cooked shrimp, bean sprouts, sliced jalapeno, and green onions to create thick patties that are fried in vegetable oil until crispy and golden on both sides. The combination provides a delicate texture contrast between the fluffy eggs and crunchy bean sprouts, with a mild heat from the jalapeno.

The sauce consists of chicken broth, ketchup, soy sauce, rice vinegar, sugar, and cornstarch cooked together until thickened. This sauce imparts a sweet and savory glaze that complements the mildness of the omelette and adds moisture to the dish.

These patties are typically served individually topped with the sauce, offering a comforting and satisfying meal. The recipe notes that using enough oil during frying helps keep the egg light and fluffy, while less oil will result in a flatter texture.

Ingredients

Servings

Sauce

  • 1/2 cup chicken broth
  • 1/4 cup ketchup
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar (or apple cider vinegar)
  • 1 1/2 tablespoon sugar
  • 2 teaspoons cornstarch

Omelette

  • 6 egg large
  • 1/3 cup bean sprout
  • 1 jalapeno pepper , sliced
  • 2 green onions , finely chopped
  • 1 cup Shrimp , cooked and chopped
  • 1/8 teaspoon salt
  • 1/8 teaspoon white pepper powder
  • 2 to 8 tablespoons vegetable oil *(Footnote 1)

Instructions

  1. Whisk together the Sauce ingredients in a saucepan over medium-low heat until the sauce simmers and thickens, about 5 minutes.
  2. Beat together the eggs, bean sprouts, green onions, shrimp, salt, and white pepper powder in a bowl until well-combined.
  3. Heat the oil in a skillet over medium heat, and scoop about 1/2 cup of the egg mixture into the skillet to make a patty.
  4. Fry until golden brown, about 4 minutes per side, and repeat with the remaining egg mixture. Set the patties aside.
  5. Spoon the sauce over the patties.

Notes

  • Use ample oil when frying to maintain a fluffy texture in the egg patties.
  • Reducing the oil is possible but results in denser, flatter omelettes.
