Shrimp Stir Fry with Noodles

Sweet and savoury, this healthy Shrimp Stir Fry with Noodles comes together with simple everyday ingredients in a flash! Perfect for a busy weeknight, this stir fry noodle recipe is loaded with veggies and is super versatile.

Ingredients
For the Sauce
- ¼ cup soy sauce
- ¼ cup honey
- ¼ cup orange juice or pineapple juice
- 1 tbsp mirin
- 2 tbsp sesame oil
- 2 tsp cornstarch
For the Shrimp Stir Fry
- 2 tbsp vegetable oil divided
- 4 cloves garlic minced
- 2 cup broccoli florets cut into bite sized pieces
- 1 to 2 carrot peeled and julienned or shredded
- 1 red bell pepper deseeded and cut into strips
- 1 lb Shrimp peeled and deveined
- salt and pepper to taste
- 350 grams noodles I used chow mein noodles
Garnish
- green onions
- sesame seeds
Instructions
- Combine the sauce ingredients and set it aside.
- In a large non-stick skillet or wok, heat up 1 tbsp of oil over medium-high heat. Once hot, add shrimp in a single layer and cook for 1 to 2 minutes on each side, or just until firm and pink. Set aside on a clean plate.
- Add the rest of the oil to the pan and once hot, add the vegetables and garlic and stir fry for 2 to 3 minutes. Season with salt and pepper. Meanwhile, cook your noodles according to the package (mine only requires one minute to cook in boiling water).
- Add the cooked noodles to the pan and continue to stir fry to combine, for another minute. Then, add the sauce and stir fry for another minute.
- Add the cooked shrimp back to the pan and toss to combine.
- Serve as is or garnish with some green onions and sesame seeds.
