Description
This Sichuan Style Barbecue Mix blends various spices and toasted nuts, including Sichuan peppercorns for their signature numbing heat, cumin and fennel seeds for earthiness, and toasted sesame seeds for nuttiness. Nuts like peanuts and walnuts add depth and texture, while star anise, Chinese cinnamon (cassia), and optional dried tangerine peel and sand ginger contribute sweet and citrusy notes. Sugar, salt, ground ginger, and garlic powder balance and enhance the complex flavor profile.
When mixed with soy flour and a small amount of MSG, this seasoning creates a dry dipping sauce that is commonly used in Sichuan dishes. The soy flour reduces heat intensity and melds flavors, while MSG boosts umami. The blend is versatile for sprinkling on grilled meats, snacks, or vegetables to evoke authentic Sichuan barbecue flavors.
Ingredients
- 1 cup Sichuan pepper you can make this with the same instruction in How to make Chinese red oil, flakes
- 1 tbsp. Sichuan peppercorn
- 1 tbsp. cumin seeds
- 1/2 tbsp. fennel seeds
- 2 tbsp. sesame seeds toasted
- 3/4 cup nuts , peanuts and walnuts (cashew can work fine too)
- 1 star anise
- 1 small piece cassia cinnamon or Chinese cinnamon
- 1 small piece dried tangerine peel , optional
- 1 small piece sand ginger , optional
- 1 tbsp. sugar
- 1/2 tbsp. salt
- 1 tbsp. ground ginger
- 1 tbsp. garlic powder
Instructions
Sichuan dry dipping
- ix 1 tablespoon of spice mix and 1/2 tablespoon of soy flour and 1/2 teaspoon of MSG. Mix well. That’s a very basic Sichuan style dry dipping sauce. Adding soy flour can enhance the flavor and reduce the hotness.
Notes
- This spice mixture is calculated nutritionally based on nearly every tablespoon of the blend.
- For a basic dry dipping sauce, mix one tablespoon of this blend with half a tablespoon of soy flour and half a teaspoon of MSG.
