  • ½ cup unsweetened almond milk
  • ½ teaspoon chia seeds (optional)
  • ½ teaspoon baking powder
  • teaspoon ground cinnamon
  • 1 pinch sea salt
  • 1 Tablespoon maple syrup
  • 2 Tablespoon mashed banana
  • 2 Tablespoon chopped strawberries
  • 1 Tablespoon chocolate chips plus more for topping
  • chopped strawberries, banana slices and/or maple syrup optional toppings

Apple Cinnamon Baked Oatmeal

  • ½ cup old fashioned rolled oats
  • ½ cup unsweetened almond milk
  • ½ teaspoon chia seeds optional
  • ½ teaspoon baking powder
  • ¼ teaspoon ground cinnamon
  • 1 pinch sea salt
  • 2 Tablespoon unsweetened applesauce
  • 1 Tablespoon maple syrup
  • 2 Tablespoon chopped apples plus more for topping
  • extra apple chunks, a drizzle of maple syrup and/or a drizzle of nut butter optional toppings

Blueberry Baked Oatmeal

  • ½ cup old fashioned rolled oats
  • ½ cup unsweetened almond milk
  • 2 Tablespoon vanilla protein powder
  • 1 Tablespoon natural almond butter
  • ½ teaspoon chia seeds
  • ½ teaspoon baking powder
  • teaspoon cinnamon
  • 1 pinch sea salt
  • 1 Tablespoon maple syrup
  • 2 Tablespoon blueberries plus more for topping

Banana Walnut Baked Oatmeal

  • ½ cup old fashioned rolled oats
  • ½ cup unsweetened almond milk
  • 1 Tablespoon maple syrup
  • 1 Tablespoon almond butter or peanut butter
  • ½ teaspoon chia seeds
  • ½ teaspoon baking powder
  • teaspoon cinnamon
  • ¼ teaspoon vanilla extract
  • 1 pinch sea salt
  • 2 Tablespoon mashed banana
  • 2 Tablespoon chopped walnuts divided
  • 2 Tablespoon vanilla protein powder optional
  • Banana slices for topping

Instructions

Strawberry Chocolate Chip Baked Oatmeal

  1. Preheat: Preheat oven to 350F.
  2. Mix ingredients: Combine all ingredients (except chopped strawberries and chocolate chips) in a mixing bowl.
  3. Add mix-ins: Add chopped strawberries and 1 Tablespoon of chocolate chips. 
  4. Pour: Pour into a greased ramekin. (I used an 8 oz mini Le Creuset) Top with additional chocolate chips. 
  5. Bake: Bake at 350°F for 30-35 minutes or until an inserted toothpick comes out clean. 
  6. Enjoy: Let cool, add toppings of choice and dive in. 

Apple Cinnamon Baked Oatmeal

  1. Preheat: Preheat oven to 350°F.
  2. Mix ingredients: Combine all ingredients in a mixing bowl.
  3. Pour: Pour into a greased ramekin. Top with additional chopped apples.
  4. Bake: Bake at 350°F for 30-35 minutes or until an inserted toothpick comes out clean. 
  5. Enjoy: Let cool, add toppings of choice and dive in.

Blueberry Baked Oatmeal

  1. Preheat: Preheat oven to 350°F.
  2. Mix ingredients: Combine all ingredients in a mixing bowl.
  3. Pour: Pour into a greased ramekin.
  4. Bake: Bake at 350°F for 25 minutes or until an inserted toothpick comes out clean. 
  5. Enjoy: Let cool, top with a drizzle of almond butter and extra blueberries and dive in!

Banana Walnut Baked Oatmeal

  1. Preheat: Preheat oven to 350°F.
  2. Mix ingredients: Combine all ingredients (except 1 T walnuts and banana slices) in a mixing bowl.
  3. Add walnuts: Add chopped walnuts
  4. Pour: Pour into a greased ramekin. Top with additional walnuts.
  5. Bake: Bake at 350°F for 25-30 minutes or until an inserted toothpick comes out clean. 
  6. Enjoy: Let cool, top with more almond butter and banana slices and dive in!
