  • ½ cup old fashioned rolled oats
  • ½ cup unsweetened almond milk
  • 1 tbsp maple syrup
  • 1 tbsp almond butter or peanut butter
  • ½ tsp chia seeds
  • ½ tsp baking powder
  • tsp cinnamon
  • ¼ tsp vanilla extract
  • 1 pinch sea salt
  • 2 tbsp mashed banana
  • 2 tbsp chopped walnuts divided
  • 2 tbsp vanilla protein powder optional
  • banana slices for topping

Instructions

  1. Preheat: Preheat oven to 350°F.
  2. Mix ingredients: Combine all ingredients (except 1 T walnuts and banana slices) in a mixing bowl.
  3. Walnuts: Add chopped walnuts.
  4. Pour: Pour into a greased ramekin. Top with additional walnuts and banana slices.
  5. Bake: Bake at 350°F for 25-30 minutes or until an inserted toothpick comes out clean.
  6. Enjoy: Let cool, top with a drizzle of almond butter and banana slices and dive in! If the baked oats need more moisture you can add a splash of almond milk as well.
