Ingredients

  • 1.50 to 2 pounds chicken breast cut into bite-sized pieces, boneless skinless
  • 1 red onion cut into large chunks, large
  • 8 ounces portobello mushrooms white button mushroom may be substituted; I keep them whole so they don't overcook, baby
  • 1 zucchini cut into large bite-sized pieces, medium to large size
  • 3 tablespoons olive oil
  • 1 teaspoon paprika or to taste (smoked paprika may be substituted)
  • ½ teaspoon oregano or to taste, dried
  • 1 teaspoon kosher salt or to taste
  • ¾ teaspoon black pepper or to taste, freshly ground
  • 1 to 2 tablespoons parsley I used flat-leaf, finely minced for garnishing, or to taste; optional (basil, thyme, or other fresh herbs may be substituted, to taste, fresh

Instructions

  1. Preheat oven to 425F (use Convection if you have it, you don't have to reduce the temp) and line a baking sheet with aluminum foil for easier cleanup (recommended).
  2. Add the chicken, red onion, mushrooms with the stem/gill side facing up, zucchini, evenly drizzle with olive oil, evenly season with paprika, oregano, salt, pepper, and toss with your hands very well to coat evenly.
  3. Bake for about 20 minutes or until chicken is cooked through and vegetables are tender.
  4. Optionally garnish with parsley and serve immediately.

Notes

  • Cooking time: Cooking time will vary based on the thickness of the chicken, if you used 2 full pounds, the size of your other vegetables, and being that this is quite a hot oven, check starting at 15 minutes and often so you don’t overcook the chicken which can dry out quickly. I recommend rotating your baking sheet midway through roasting to ensure even cooking, especially if you're using a convection oven.
  • Extra will keep airtight in the fridge for up to 5 days or in the freezer for up to 4 months.
