  • 4 cups watermelon cubed, seeded
  • ½ cup feta cheese fat free
  • 2 tablespoon olive oil
  • ½ lime juiced
  • ¼ cup mint julienned

Instructions

  1. Add first two ingredients to bowl.
  2. Put olive oil and lime juice in a small bowl and whisk well.
  3. Pour over salad and top with mint.  Toss gently.  This needs to be made right before serving.  It doesn't sit well in fridge bc the watermelon lets off a lot of water.  

Notes

  • Prepare the salad immediately before serving to maintain watermelon texture.
  • Use ripe, seeded watermelon cubed evenly for best consistency.
