Description
This salad combines fresh cubed, seeded watermelon with crumbled feta cheese. Ingredients
- 4 cups watermelon cubed, seeded
- ½ cup feta cheese fat free
- 2 tablespoon olive oil
- ½ lime juiced
- ¼ cup mint julienned
Instructions
- Add first two ingredients to bowl.
- Put olive oil and lime juice in a small bowl and whisk well.
- Pour over salad and top with mint. Toss gently. This needs to be made right before serving. It doesn't sit well in fridge bc the watermelon lets off a lot of water.
