Slow Cooker Carnitas (Mexican Pork)

Slow Cooker Carnitas is a tender shredded pork dish cooked slowly with garlic, onion, olive oil, and enchilada sauce. The pork roast is seared to build flavor, then slow-cooked until fork-tender in a flavorful sauce. The result is juicy, savory carnitas that can be used in tacos, burritos, or as a filling for nachos and other dishes.

Description

Slow Cooker Carnitas uses a pork roast seasoned with salt, pepper, and layered with sautéed onions and minced garlic to create a rich base flavor. The searing step browns the meat, adding depth and texture, before placing everything into a baking dish covered with green enchilada sauce. Baking at low heat for several hours breaks down the meat fibers, making it easy to shred.

The enchilada sauce contributes layers of mild heat, tanginess, and spice, infusing the pork during cooking. The final shredded carnitas are juicy and tender with a balanced savory taste, suitable for assembling into tacos, burritos, or as a flavorful protein addition atop nachos and salads.

This method is practical for cooking carnitas without deep-frying and provides a hands-off approach using the oven or crockpot. Searing the meat before slow cooking ensures a more complex flavor and texture contrast between the bark and tender shredded interior.
