  • 2 pounds chicken breast boneless skinless
  • 1 medium white onion diced
  • 1 cup carrot sliced
  • 1 cup celery sliced
  • 1 tablespoon ginger grated
  • 1 tablespoon garlic about 3 cloves, minced
  • 8 cups chicken broth
  • 1 teaspoon thyme dried
  • 1 teaspoon oregano dried
  • 12 ounces egg noodles
  • 1/2 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
  • 3 tablespoons parsley chopped, fresh

Instructions

  1. Place 2 pounds boneless skinless chicken breasts into the bottom of a 6 to 8-quart slow cooker.
  2. Top with 1 medium white onion (diced), 1 cup sliced carrot, 1 cup sliced celery, 1 tablespoon grated ginger, and 1 tablespoon minced garlic.
  3. Pour in 8 cups chicken broth and stir in 1 teaspoon dried thyme and 1 teaspoon dried oregano.
  4. Cover with the lid and cook on low for 6 to 8 hours or high for 3 to 4 hours, until the chicken is tender.
  5. Remove the chicken and shred with forks. Return the shredded chicken to the slow cooker.
  6. Stir in 12 ounces egg noodles, cover, and cook on high for 12 to 15 minutes, until the noodles are soft.
  7. Taste and season with 1/2 teaspoon salt and 1/2 teaspoon black pepper, to taste. Stir in 3 tablespoons chopped fresh parsley and serve immediately.
