Slow Cooker Corned Beef Hotpot
Report
Take a trip to Northumberland with this delicious, corned beef hotpot cooked slow in the slow cooker. Loaded with tinned corned beef, baked beans, potatoes, carrots, and onion and then topped with sliced potatoes.

Ingredients
- 500 g Air Fryer Sliced Potatoes
- 800 g corned beef
- 1 medium white onion
- 3 medium carrots
- 3 medium white potatoes
- 1.5 Cans Heinz Baked Beans
- 2 Tsp butter
- 250 g mature cheddar cheese
- 2 Tsp parsley
- salt & pepper

Instructions
- Dice and peel your onion and sauté in the slow cooker on the stovetop with a little butter until the onion has softened. Take the slow cooker off the heat. Peel and dice your potatoes and carrots and add to the slow cooker. Add butter to the top along with salt, pepper, and parsley and cook for 2 hours on high.
- Add in corned beef and mix and then add half the grated cheese, the baked beans and stir.
- Then press down with the back of your spatula.
- Add a big layer of rest of the cheese. Then place the lid back on the slow cooker and leave on high whilst you make the sliced potatoes.
- Prep your air fryer sliced potatoes, cook, and then place on top of the melted cheese.
- Cook for an extra 30 minutes with the sliced potatoes on top before serving.
Notes
- Beef. I recommend lean beef when making a beef hotpot. Otherwise, your hotpot can have an overly fatty texture to it and will need the fat draining from it.
- Leftovers. If you have beef hotpot leftovers, I do recommend you try our air fryer Cornish pasties as they are delicious and so easy to make from the leftovers.
