Slow Cooker Creamed Corn
Description
This Slow Cooker Creamed Corn recipe uses frozen corn combined with sugar and salt to create a natural sweetness balanced by seasoning. Milk, cubed butter, and cream cheese are layered on top before slow cooking several hours on low or high heat. The gentle heat softens the corn and melts the butter and cheese, which when stirred combine into a creamy sauce. The texture is smooth and rich without being overly thick.
Finishing the dish with crumbled cooked bacon adds a smoky, savory crunch and thinly sliced chives contribute fresh herbal notes. The slow cooker method allows hands-off preparation with gentle heat producing tender corn and a thick but not heavy consistency.
This creamed corn is well suited as a comforting side dish for meals requiring a creamy vegetable accompaniment. The bacon topping provides additional texture and flavor contrast.
Frozen corn may be used directly from the freezer without thawing. Stirring the mixture initially may show curdling from the cream cheese, which smooths out with continued stirring. Canned corn can also be used if drained prior to cooking.

- 2 lbs corn frozen
- 2 teaspoons sugar
- 1 teaspoon salt
- 1 cup milk
- 4 tablespoons butter cut into cubes
- 8 ounces cream cheese cut into cubes
