Slow Cooker Guinness Beef Stew Recipe
Description
The Slow Cooker Guinness Beef Stew Recipe brings together chunks of seared beef, vegetables like onion, celery, carrots, and potatoes, and robust liquids including Guinness beer, beef stock, and Worcestershire sauce. Tomato paste caramelization and the inclusion of gelatin (except when using homemade stock) enhance the stew's body. Dark chocolate is stirred in, contributing a faint richness without sweetness. Cooking low and slow in a slow cooker, the beef becomes very tender and the potatoes fully softened, resulting in a thick stew with layered savory flavors and a smooth texture from the long simmer.
The stew suits a classic dinner served in a warm bowl, filling and hearty enough for colder days. It pairs well with crusty bread for dipping or a simple green side to contrast its richness. The layering of ingredients and slow cooking allow the distinctive taste of Guinness beer and dark chocolate to subtly enhance the beef and vegetables.
Ingredients
- 2 lb beef cut into 2" pieces, stewing
- ⅓ cup all-purpose flour
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 tablespoon oil
- 1 tablespoon butter
- 1 large onion minced
- 2 talks celery diced
- 4 cloves garlic minced
- 5.5 .5 ounce tomato paste canned
- 1 tablespoon gelatin omit if using homemade beef stock
- 2 cups beef stock
- 1 tablespoon Worcestershire sauce
- 1 ounce dark chocolate chopped
- 3 medium carrot chopped
- 10 small potato
- 1 Guinness beer 440ml/ 14.8 oz, tall can
Instructions
- Place the beef into a bowl, sprinkle the flour, salt, and pepper, and mix so that the beef chunks are all coated. Heat the oil and butter in a large frying pan over medium-high heat. Add the beef, working in batches so as not to crowd the pan, and sear until well browned on all sides. Transfer the beef to your slow cooker.
- Add the onion, celery stalks, and garlic to the pan and saute until the onion is soft and starting to brown, about 5-7 minutes. Add the tomato paste and let it caramelize for 2-3 minutes, or until is starts to darken and turn sweet smelling. Transfer to your slow cooker.
- Mix the gelatin into the beef stock then pour that into your slow cooker along with the Worcestershire sauce, chocolate, carrots, potatoes, and Guinness. Set your slow cooker to cook on low for 8-10 hours. The stew is done when the meat is super tender and the potatoes are soft.
