Slow Cooker Hawaiian BBQ Chicken Drumsticks
Description
Slow Cooker Hawaiian BBQ Chicken Drumsticks combine common pantry ingredients like soy sauce, pineapple juice, brown sugar, ketchup, Worcestershire sauce, and spices to create a rich barbecue sauce. The sauce thickens with a cornstarch slurry added before cooking. The chicken drumsticks simmer in this mixture for several hours on low or high, allowing the flavors to seep deeply into the meat while making it tender.
Finishing the drumsticks under the broiler with a brush of the reserved sauce enhances the color and adds a slight caramelized texture. The bright notes of fresh pineapple slices and cilantro garnish complement the sweet and savory profile of the dish. This recipe works well served over rice or noodles for a complete meal.
The recipe allows substitutions such as maple syrup for brown sugar and arrowroot powder instead of cornstarch. Leftovers should be stored tightly sealed in the refrigerator and eaten within three days to maintain freshness.
Ingredients
- 3 tablespoons soy sauce
- 1/4 cup pineapple juice
- 4 tablespoons brown sugar
- 1 tablespoon ketchup
- 1 teaspoon Worcestershire sauce
- 1 teaspoon black pepper ground
- 1 teaspoon salt
- 1/2 cup BBQ sauce
- 2 tablespoons cornstarch or arrowroot powder
- 2 tablespoons water
- 3 pounds chicken drumstick
- cilantro for garnish
- pineapple for serving, fresh
Instructions
- In a mixing bowl, add soy sauce, pineapple juice, brown sugar, ketchup, worcestershire, pepper, salt, and bbq sauce. In a ramekin or small bowl, mix together the cornstarch and water, then add to the bowl with the bbq sauce. Whisk together well. Set aside ¼ cup.
- Place drumsticks into the slow cooker. Pour bbq mix over the drumsticks. Cover, and set the slow cooker to low for 6 hours, or high for 3.5 hours.
- Once finished cooking, set drumsticks onto a baking sheet and brush with remaining sauce. Place under the broiler in the oven for 5 minutes
- Garnish with cilantro and serve with pineapple slices. Enjoy!
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- You can replace brown sugar with maple syrup and cornstarch with arrowroot powder as alternatives.
- Serve the drumsticks over rice or noodles to complete the meal.
- Broil chicken with remaining sauce for 5 minutes to get a caramelized glaze.
