Slow Cooker Loaded Mashed Potatoes

Easy cheesy slow cooker loaded mashed potatoes are a simple way to bring a delicious side dish to life by mixing in sour cream, smoky bacon, and shredded cheddar cheese!

Ingredients

  • 2.5 pounds red potatoes cut into one inch pieces
  • 1 cup low sodium chicken broth
  • 4 tablespoons butter
  • salt and pepper
  • ½ cup milk
  • 1 cup shredded cheddar cheese
  • ¼ cup sour cream
  • 4 strips bacon cooked and diced into small pieces.

Instructions

  1. Grease the bottom of the slow cooker with cooking spray or a little oil.
  2. Add the potatoes, chicken broth, butter, salt, and pepper.
  3. Place the lid on and cook on high for 4 hours or low for 6 hours until the potatoes are very tender.
  4. Remove the lid and mash the potatoes until creamy with a potato masher or electric hand mixer on low speed.
  5. Then stir in the milk and stir to combine.
  6. Add the cheese, sour cream and bacon and stir to mix thoroughly.
  7. If not serving immediately, set the slow cooker to "warm" until ready to serve.
  8. Top with more shredded cheese and scallions if preferred.

Notes

  • Use Yukon gold potatoes if preferred.
  • Remove potato skin if preferred.
  • Add ½ teaspoon garlic powder if desired.
  • Add sliced green onions if desired.
  • Add more bacon if desired.
  • Use precooked bacon for quicker
  • Substitute 4 ounces of cream cheese for ½ cup of cheddar cheese.
  • Shredding cheese off a block is best but use pre-shredded cheese if desired.
