  • 3 pounds pork shoulder , cut into 1 inch chunks
  • 1 teaspoon kosher salt
  • 1/4 teaspoon black pepper coarse ground
  • 14 ounces diced tomatoes , undrained
  • 4 ounces diced green chiles
  • 10 ounces Green enchilada sauce
  • 4 carrot cut into 1 inch chunks
  • 1 onion , diced
  • 3 cloves garlic , minced
  • 1 tablespoon cumin ground
  • 1 teaspoon oregano dried

Instructions

  1. Season pork with salt and pepper and add to a large Dutch oven on medium-high heat with vegetable oil.
  2. Cook until seared on all sides until well browned, about 3-4 minutes on each side.
  3. Transfer the seared pork pieces to your slow cooker, along with the juices and as many browned bits.
  4. Add in the remaining ingredients to the slow cooker, stir well to combine and cover.
  5. Cook, on low heat for 5-6 hours or until pork is fork tender.
