Ingredients

  • 8 thick pork sausages
  • 1 medium white onion
  • 4 Unsmoked bacon rashers
  • 3 cans baked beans
  • 2 cans chopped tomatoes
  • 2 large white potatoes
  • 2 large carrots
  • 2 Tsp Garlic puree
  • 2 Tsp tomato puree
  • 1 Tbsp tomato ketchup
  • 1 Tbsp extra virgin olive oil
  • 1 Tbsp Mixed Herbs/Italian Seasoning
  • 2 Tsp sweet paprika
  • salt & pepper

Instructions

  1. Let’s make slow cooker sausage casserole with baked beans. Put the Ninja Foodi or slow cooker on sauté and brown the sausages on all sides. Then put the sausages to one side.
  2. Next peel and dice the onion and dice the bacon into chunks and load into the slow cooker with the olive oil and sauté until you have softened onion and crispy bacon.
  3. Next add everything else and stir and get your spatula around the bottom of the slow cooker for any bits of onion that are stuck on.
  4. Next gently place the sausages on top of the rest of the casserole ingredients.
  5. Place the lid on the slow cooker and cook your sausage and baked bean casserole for 4 hours on high or 7 hours on low.
  6. Do a fork test and make sure the potatoes and carrots are fork tender.
  7. Stir the sausage casserole and add more baked beans if you feel it needs it and adjust with extra salt and pepper if needed.

Notes

  • Leftovers. This slow cooked sausage and bean casserole will also work well with reheated the next day.
