Ingredients

  • 8 oz. red onion , diced
  • 8 oz. tomatoes , peeled, seeded and finely diced
  • 8 oz. queso fresco , fresh ricotta or mozzarella cheese, cut into small cubes
  • 3 ears yellow corn
  • 20 black olives
  • 16 oz. large green fava beans , without skin, fresh or frozen
  • parsley
  • 4 tablespoons olive oil
  • vinegar (or lemon juice)
  • salt
  • pepper

Instructions

  1. In a pot generously filled with boiling water, add the corn on the cob and cook for 45 minutes.
  2. In a saucepan, bring a large quantity of water to a boil and boil the beans for 15 minutes for frozen beans (or 25 minutes for fresh ones), over high heat and uncovered.
  3. Drain and shell the corn cobs. Let them cool completely.
  4. Drain the beans and let them cool completely.
  5. In a salad bowl, add the beans, corn, onion, tomato, cheese and olives.
  6. Add olive oil, salt, pepper and vinegar or lemon juice to taste. Mix.
  7. Sprinkle with flat parsley leaves and serve.
