Coffee Cake:

  • 1/2 cup butter softened, unsalted
  • 1 cup sour cream
  • 1 cup sugar
  • 2 large egg
  • 2 teaspoons vanilla extract
  • 1 3/4 cups flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda

Crumble and Topping:

  • 1/3 cup sugar
  • 1/3 cup brown sugar , packed
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 3 tablespoons flour
  • 3 tablespoons butter softened, unsalted
  • 2 cups pecans , finely chopped

Instructions

  1. Preheat oven to 350 degrees and spray an 9x13 baking dish with baking spray.
  2. In a large bowl whisk together butter, sour cream, sugar, eggs and vanilla extract until smooth.
  3. Sift together flour, salt, baking powder and baking soda.
  4. Add the dry ingredients to the wet ingredients and whisk until just combined.
  5. To make the crumble mash together the sugar, brown sugar, cinnamon, salt, flour and butter with a fork, then stir in the pecans.
  6. Add half the batter to your baking dish topped with half the crumble mixture.
  7. Top with the rest of the batter very carefully not to displace the pecan mixture.
  8. Top with remaining crumble mixture and bake for 35-40 minutes until golden brown and a toothpick comes out clean.
