Southern Black Eyed Pea Salad
Description
Southern Black Eyed Pea Salad features cooked black-eyed peas mixed with fresh vegetables including corn, red onion, Roma tomatoes, cucumber, and green onions. The salad is dressed with a vinaigrette made from apple cider vinegar, lime juice, sugar, kosher salt, freshly ground black pepper, ground cumin, coriander, smoked paprika, and optional hot sauce to taste. This mixture is refrigerated for at least four hours, allowing the flavors to develop and the salad to chill.
The salad offers a combination of tender beans with crunchy, fresh vegetables, layered with tangy, slightly sweet, and smoky notes from the dressing and spices. It works well as a side dish alongside grilled meats or as a flavorful dip with corn chips, providing a versatile addition to casual meals or gatherings.
