Southwest Chicken Salad Recipe

This Southwest chicken salad is packed full of fresh and vibrant ingredients, and made with a chili lime dressing. Spiced chicken breasts are coated in a spice mixture and oven baked for a filling and hearty Mexican salad.

Southwest Chicken

  • 2 pounds chicken breast boneless skinless
  • 2 tablespoons olive oil
  • 1 tablespoon chili powder
  • 2 teaspoons paprika
  • 1 teaspoon cumin ground
  • ½ teaspoon garlic salt

Chili Lime Dressing

  • 1 cup yogurt plain, Greek
  • 1 teaspoon chili powder
  • ½ teaspoon paprika
  • ½ teaspoon cumin ground
  • garlic salt dash
  • lime juice of 1

Southwest Chicken Salad

  • 8 cups lettuce
  • 1 cup cherry tomato multicolored
  • 1 cup black beans
  • 1 cup bell pepper sliced
  • 2 corn sliced off the cob, ears
  • 1 avocado sliced, large
  • ½ cup queso fresco
  • chicken breast Southwest style
  • chili lime dressing
  • lime
  • cilantro

Instructions

Southwest Chicken Breasts

  1. Preheat oven to 400°F
  2. Pat the chicken breasts dry.
  3. Brush them with olive oil.
  4. In a small bowl mix together the chili powder, paprika, cumin, and garlic salt.
  5. Pour the spice mixture onto a plate.
  6. Coat the chicken breasts in the spice mixture.
  7. Place the chicken breasts on a foil-lined baking sheet.
  8. Put the baking sheet in the oven.
  9. Bake for 20-25 minutes*.

Chili Lime Dressing

  1. Add the greek yogurt to a small bowl.
  2. Mix in the spices and lime juice.
  3. Keep mixing until the mixture is completely smooth, set aside.

Southwest Chicken Salad

  1. Add the lettuce to a large bowl.
  2. Add the tomatoes, black beans, bell peppers, corn, avocado, and queso fresco, toss.
  3. Add the southwest chicken (sliced), toss.
  4. Add the chili lime dressing, toss to coat.
  5. Divide into 4 bowls.
  6. Garnish with lime slices and fresh cilantro.

Notes

  • *Bake the chicken until it reaches an internal temperature of 165°F, time will vary depending on the thickness of the breasts.
