Spanakopita Triangles

Spanakopita Triangles feature a filling of crumbled feta cheese, cooked spinach, egg, and spring onion, seasoned with black pepper, wrapped in phyllo pastry brushed with olive oil. The pastry is cut into strips, filled, and folded into triangles before baking until golden and crisp. This method creates hand-held, flaky parcels with savory, mildly tangy filling suitable as appetizers or snacks.

Description

Spanakopita Triangles combine a filling of crumbled feta cheese with cooked spinach and finely chopped spring onion, bound together by egg and seasoned simply with ground black pepper. This mixture provides a creamy, slightly salty filling with bright green leafy notes.

The filling is wrapped in thin sheets of phyllo pastry, which is brushed generously with olive oil to promote a crisp, flaky texture on baking. The pastry sheets are cut into strips, each filled at one end, then folded into compact triangle parcels. Baking at 180 degrees Celsius until golden crisps the pastry while keeping the filling tender.

These triangles are well suited as finger foods, appetizers, or light snacks. The use of phyllo ensures a delicate crunch contrasted by the rich, savory spinach and cheese center. Alternative ingredients like puff pastry or kale can be used as substitutions according to preference or availability.

The recipe includes a practical tip to substitute puff pastry for easier handling and to replace spinach with kale or use different cheeses like ricotta for variation. These adjustments can impact the texture and flavor but maintain the basic principle of a savory stuffed pastry triangle.

Ingredients

Servings
  • 5 phyllo pastry sheets
  • 250 g feta cheese (or cow's cheese)
  • 1 cup spinach frozen, cooked
  • 1 egg
  • 1 spring onion
  • ¼ teaspoon black pepper ground
  • 1 cup olive oil

Instructions

  1. Use a fork to crumble the cheese well.
  2. Next, roughly chop the cooked spinach and chop spring onion finely and add them to the cheese bowl together with the egg and mix well until combined.
  3. Add the pepper and mix again until you have a uniform paste.
  4. Lay 1 phyllo sheet on the work surface and brush generously with olive oil.
  5. Hold it in half, then using a sharp knife cut it into 4 strips.
  6. Place a teaspoon of the spinach mixture right at the end of each strip, then fold it into a tringle.
  7. Repeat with the remaining phyllo sheets until all the spinach mixture has been used up.
  8. Line a baking tray with non-stick parchment paper and bake in the preheated oven at 180 degrees Celsius (350 Fahrenheit) for 25 minutes or until golden and crunchy.

Notes

  • Puff pastry can be used instead of phyllo pastry, cut into squares, filled, and folded into triangles for easier preparation.
  • Spinach may be replaced with kale if preferred.
  • Feta cheese can be substituted with cow's cheese or ricotta, which pairs well with spinach.
