Speedy Stovetop Cranberry Sauce
Description
The recipe involves heating cranberries with lime juice, zest, and honey to quickly soften the berries and release their flavor. After a few minutes, brown sugar is added, and any stubborn berries are mashed to incorporate their interior, thickening the sauce. The option to puree the sauce smooth using a blender or immersion blender offers texture preference, with the smooth version providing a velvety consistency.
Because the sauce uses fresh lime juice and zest alongside honey and brown sugar, it balances sweetness with citrus brightness and the cranberries' tartness. It cooks quickly, making it a practical choice for holiday meals or whenever fresh cranberries are available.
The final sauce yields about 2 cups and can be served alongside meats, especially poultry, or used as a spread or condiment. The recipe notes indicate nutrition can vary and encourage adjustment of sweetness to taste.
Ingredients
- 6 cups cranberries approx. 2 bags, fresh
- 2 TBSP lime juice
- 1.5 tsp lime zest
- ¾ cup honey
- 3 TBSP brown sugar
Instructions
- Heat a small sauce pot to medium-high heat and add your berries, juice, zest and honey. Cover and stir occasionally for up to five minutes.
- My sauce was literally done in three.
- Stir in brown sugar and mash any berries that were too stubborn to burst with a spoon/fork. Stir a bit more as the sauce thickens and remove from heat.
- For an extra smooth sauce, puree in a blender or food processor.I don’t do this with my other sauces [I typically keep it nice and rustic!] but I pureed this one and loved it! An immersion blender also works fantastic for a lusciously smooth cranberry sauce.
- If you’re making the larger batch of sauce it may take just a few extra minutes to cook but it’s well worth it!
- Oh hi, that’s it. Easiest recipe ever!
Notes
- This recipe yields about 2 cups of cranberry sauce, making it suitable for small to medium servings.
- For a smoother texture, blend the sauce using a blender or immersion blender based on preference.
- The sauce balances tartness of cranberries with sweetness from honey and brown sugar and a fresh citrus lift from lime juice and zest.
