Ingredients
- 2 canned chipotle peppers in adobo sauce plus 1 tablespoon sauce
- 1 orange juiced
- 1 lemon juiced
- ¼ cup Tastefully Simple Mango Grill Sauce
- 1 teaspoon Tastefully Simple Garlic Garlic
- 1 teaspoon Tastefully Simple Onion Onion
- 1/2 teaspoon kosher salt
- 1 1/2 pounds pork tenderloin cut into 1-inch pieces
- 3 peaches sliced
- 1/4 red onion pieces (optional)
- cilantro leaves for garnish (optional)
Instructions
- Soak bamboo skewers in water for thirty minutes.
- Preheat grill to medium-high.
- Place chipotles, adobo sauce, orange juice, lemon juice, and mango sauce, in a blender and puree.
- Separate the sauce in half in two different bowls.
- Alternatively thread pork and peach slices onto skewers. Brush sauce onto pork and peaches.
- Sprinkle seasonings over kabobs.
- Grill skewers on one side until pork releases easily from the grate, about 3 to 4 minutes. Flip skewers and continue to grill for 2 to 3 minutes more.
- Brush or drizzle with reserved sauce.
- Garnish with cilantro and serve.
Notes
- Soak bamboo or wooden skewers in water for thirty minutes prior to turning into kabobs. If you are using metal skewers, you can skip this step.
- The sauce can be made and refrigerated up to a week in advance.
- The skewers can be soaked and threaded up to 4 hours ahead.
- If you can't find good peaches in season, I'd recommend swapping in another stone fruit. Nectarines are the closest in flavor to peaches, but plums or apricots could also work beautifully.
- No Tastefully Simple products? Replace with your favorite onion and garlic powder, and replace the mango grill sauce with mango, peach, or other fruit preserves.
