Ingredients

  • 1 tsp salt
  • 1 tsp pepper
  • 1 lb thin sliced ribeye or sirloin cooked and peeled
  • 2 tbsp olive oil
  • 2 tbsp lime juice
  • 4 teaspoons fish sauce
  • 1 tbsp canola oil
  • 2 teaspoons light brown sugar
  • ½ teaspoon crushed red pepper
  • 1 cup bell pepper thinly sliced
  • 1 cup cucumber thinly sliced
  • ¼ cup fresh basil, cilantro, and mint
  • ¼ cup cherry tomatoes sliced
  • 3 cups butter lettuce

Instructions

  1. Season beef with a pinch of salt and pepper, sprinkled evenly across beef. 
  2. Heat a large skillet or wok on high heat. 
  3. Add oil and swirl around pan until shimmery. 
  4. Add beef to pan and cook until well browned, stirring often to prevent burning; about 5-8 minutes. 
  5. Remove beef from pan and set aside. 
  6. In a small bowl, combine fish sauce, oil, lime juice, sugar, and bell pepper and mix well until combined and sugar is dissolved. 
  7. In a large bowl, add beef, herbs, and vegetables and drizzle sauce over. 
  8. Toss well and chill, covered, for at least 1 hour and up to overnight. 
  9. Add lettuce to a bowl and toss beef and vegetables over the top.
