  • 2 egg beaten
  • 1/2 cup vegetable oil do not use olive or peanut oil
  • 1 cup pumpkin puree
  • 1/2 teaspoon vanilla
  • 1/3 cup pumpkin seeds roasted, salted, kernels (pepitas

  1. Preheat the oven to 350°F and spray a 9x5x3-inch loaf pan with nonstick spray.
  2. Sift the flour, sugar, salt, baking soda, and spices into a large bowl.
