- 1 pound steak (such as sirloin or flank steak)

- 1 cup long-grain rice
- 2 cups beef broth

- 1 can (10 oz) diced tomatoes with green chilies, drained
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- ½ teaspoon smoked paprika
- ¼ cup chopped cilantro (for garnish)
Instructions
- Heat the olive oil in a large skillet over medium-high heat. Season the steak with salt and pepper, then cook to your desired level of doneness (about 3-4 minutes per side for medium-rare). Remove from the skillet and let rest before slicing thinly.
- In the same skillet, add the chopped onion and garlic. Sauté until softened, about 5 minutes.
