  • 1 tablespoon olive oil
  • 240 g salmon or precooked salmon, for air frying, in bite-sized pieces
  • 320 g stir fry vegetables
  • 0.5 head broccoli cut into small florets
  • 75 ml teriyaki sauce
  • sesame seeds optional

Instructions

  1. Heat 1 tablespoon Olive oil and add 320 g Stir fry vegetables and 0.5 head Broccoli. Cook over a low heat for 8 minutes.
  2. Add 240 g Air fryer salmon bites and 75 ml Teriyaki sauce. Stir carefully to coat everything in the sauce.
  3. Return to the heat and cook for a further 2 minutes.
  4. Serve over rice and top with Sesame seeds (optional).

Notes

  • Salmon can be cooked in a pan if preferred, but cutting into small pieces will speed cooking.
  • Stir the vegetables frequently during cooking to avoid burning at high heat.
  • Add thinly sliced spring onions on top before serving for extra crunch.
  • This dish is not suited for freezing as salmon and vegetables alter texture upon thawing.
  • If pan-frying salmon, marinate it beforehand to boost flavor.
