Sticky Salmon Stir Fry
Description
The recipe begins by heating olive oil and cooking the stir-fry vegetables alongside small broccoli florets over low heat to soften them without burning. Pre-cooked or air-fried salmon chunks are then added along with teriyaki sauce, which simmers for a couple of minutes to glaze the ingredients evenly. Ingredients
- 1 tablespoon olive oil
- 240 g salmon or precooked salmon, for air frying, in bite-sized pieces
- 320 g stir fry vegetables
- 0.5 head broccoli cut into small florets
- 75 ml teriyaki sauce
- sesame seeds optional
Instructions
- Heat 1 tablespoon Olive oil and add 320 g Stir fry vegetables and 0.5 head Broccoli. Cook over a low heat for 8 minutes.
- Add 240 g Air fryer salmon bites and 75 ml Teriyaki sauce. Stir carefully to coat everything in the sauce.
- Return to the heat and cook for a further 2 minutes.
- Serve over rice and top with Sesame seeds (optional).
Notes
- Salmon can be cooked in a pan if preferred, but cutting into small pieces will speed cooking.
- Stir the vegetables frequently during cooking to avoid burning at high heat.
- Add thinly sliced spring onions on top before serving for extra crunch.
- This dish is not suited for freezing as salmon and vegetables alter texture upon thawing.
- If pan-frying salmon, marinate it beforehand to boost flavor.
