This pink power beet smoothie recipe is the morning glow-up you need! We're taking the classic strawberry banana combo and supercharging it with antioxidant-packed roasted beets. It’s vibrant, perfectly sweet, and bursting with vitamins to kickstart your day on a healthy note!

Ingredients
- 1 large red beet or 2 baby beets
- 1 cup quartered strawberries* 150 g
- 1 banana*
- ½ cup strawberry yogurt or dairy-free alternative, 120 g
- 1 Tbsp honey 15 g
- Splash of milk as needed
Instructions
- Roast: Preheat oven to 400°F (204°C). Trim, peel, and chop beets into ½-inch cubes. Drizzle with 1 Tbsp water and place in on aluminum foil, fashioning the foil into a sealed pouch. Cook for 40 minutes until fork-tender.
- Blend: Allow the roasted beets to cool. Blend together all smoothie ingredients, adding more honey to suit your taste and a splash of milk if needed to get things moving.
Notes
- *Use at least 1 frozen fruit to make this smoothie frosty cold (otherwise, add a handful of ice).
