Arugula with juicy strawberries, crisp cucumbers, creamy burrata cheese, pickled red onions, candied pecans, fresh basil, and a drizzle of balsamic vinaigrette. The perfect salad for spring and summer!

Ingredients
- 5 oz arugula
- 2 cups sliced strawberries
- 1 cup Persian cucumbers, sliced
- 8 oz burrata cheese, at room temperature
- Kosher salt and black pepper, to taste
- 1/2 cup chopped candied pecans
- 1/3 cup chopped basil
- pickled red onions, optional
- balsamic vinaigrette
Instructions
- Arrange arugula on a large serving platter. Top with strawberries and cucumbers.
- Break apart the burrata cheese and arrange it on top of the salad. Season with salt and pepper.
- Top with candied pecans, fresh basil, and pickled red onions, if using. Drizzle with balsamic vinaigrette.
- Serve with grilled bread or crusty bread, if desired. You can also add homemade croutons to the salad.
