Ingredients
- 1 lemon , juiced and zested
- 1 teaspoon Dijon mustard
- 1/3 cup extra-virgin olive oil
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper coarse ground
- 5 cups baby spinach , packed
- 2 cups chicken breast , chunks
- 3 cups strawberries , thinly sliced
- 1 cup pecans chopped, toasted
- 1/4 red onion , thinly sliced
- 1 cup feta cheese crumbled
Instructions
- Whisk together the lemon juice, dijon mustard, olive oil, salt and pepper.
- Add spinach, chicken, strawberries, pecans, feta cheese and onion to the bowl
- Pour the dressing over the salad and toss to combine.
