  • 1 tablespoon coconut oil or olive oil
  • 12 mushrooms or mushrooms with stems, for stuffing
  • ½ cup onion diced
  • 3 cloves garlic minced
  • 2 cups baby spinach cut into small pieces
  • 1 tablespoon balsamic vinegar
  • ¼ teaspoon black pepper
  • ¼ cup feta cheese

Instructions

  1. Preheat oven to 350 degrees.
  2. Cut up 2 of the mushrooms into diced pieces. (or remove stems from mushrooms and cut into small diced pieces.
  3. In a medium skillet add oil, onion, garlic, diced mushrooms and saute until tender, about 8-10 minutes.
  4. Add spinach balsamic vinegar and pepper and sauté until wilted.
  5. Remove from heat and add the feta cheese
  6. Stuff the mushrooms with the mixture, placing on a baking sheet.
  7. Bake for 25-30 minutes.
  8. ENJOY warm or cold.
