  • cup milk
  • 2 egg
  • 1 teaspoon vanilla extract
  • ½ cup peanut butter sugar free, creamy
  • 2 banana medium ripe
  • ¼ cup golden monk fruit sweetener optional
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ teaspoon cinnamon optional
  • 2 ¼ cups old fashioned oats
  • ½ cup chocolate chips divided, sugar free

Instructions

  1. Preheat the oven to 350°F degrees.
  2. Lightly spray the muffin tin or muffin liners with nonstick cooking spray.
  3. Place all ingredients starting with the eggs, milk, vanilla extract, peanut butter and bananas in the blender first. Then add monk fruit (optional), baking soda, powder, salt, cinnamon and oats into a blender.
  4. Pulse ingredients together until the oats are ground and the batter is smooth.
  5. Fold in the chocolate chips, reserving some for topping.
