  • 1 1/2 cups heavy whipping cream
  • 1 orange flavored gelatin 7 ounces, sugar free
  • 1 cottage cheese 16 ounces, small curd
  • 1 mandarin oranges 11 ounces, drained
  • 1 pineapple tidbits 8 ounces, drained
  • 1/3 cup pecans chopped

Instructions

  1. Place large glass or stainless steel bowl and beaters in the refrigerator or freezer for 15 minutes.
  2. Add the whipping cream to the mixing bowl and begin beating on low speed.
  3. Slowly incorporate the orange gelatin when the whipping cream begins to thicken. Increase speed when it is safe to do so (without the splatter). Mix in all the gelatin.
  4. Fold in cottage cheese, drained mandarin oranges and pineapple. Add nuts.

Notes

  • If the fruit is wet, pat it dry with paper towels before folding it into the whipped cream mixture to avoid excess moisture.
