Description

The Sugar-free Simple Syrup is a blend of water and low-carb sweetener powders heated gently to dissolve, with optional xanthan gum to add body and prevent settling.   • 1 cup water
  • 1/2 - 1 cup low-carb sweetener see information in post about sweetener options and amounts
  • 1/16 teaspoon xanthan gum (optional; for thickening)
  • pinch salt (optional, for added flavor)
  • dash vanilla (optional, for added flavor)
  • dash stevia extract powder optional; for added sweetness, or a few drops of liquid stevia
  • dash cream of tartar (or other acid; to prevent crystallization.)

Instructions

  1. Blend sweetener in a blender / food processor until finely powdered.
  2. Add cream of tartar, if using.
  3. In a small pot, combine the water and the low carb sweetener(s).
  4. Heat over low heat and stir.
  5. Allow the mixture come to a simmer.
  6. Once simmering, add the optional xanthan gum, salt, and vanilla, if using.
  7. Cover and let simmer, stirring occasionally until the sweetener is dissolved and the syrup is the desired consistency.
  8. Remove from the heat and cool completely before using.
