Sumac Dressing
Description
The Sumac Dressing brings together minced garlic and fresh thyme leaves with lemon juice and honey to balance acidity and sweetness. Sumac, a tangy spice with lemony undertones, infuses the dressing with a distinctive flavor, which is mellowed by salt, pepper, and olive oil. Shaken well to emulsify, this dressing coats salads evenly and can enhance grilled chicken when used as a marinade.
The combination of herbs and lemon makes it refreshing and bright, while the honey adds subtle sweetness that softens the tartness. The recipe is straightforward, requiring just shaking the ingredients together in a jar, making it quick to prepare and easy to store.
This dressing works well on a variety of fresh greens and is excellent for marinating chicken, especially when allowed to sit for several hours to infuse flavor before cooking. Before serving after refrigeration, a shake is recommended to recombine the ingredients. The balance of savory garlic, sweet honey, and tangy sumac creates a pleasant, layered dressing suitable for many dishes.
Storing in the fridge keeps it fresh for batch preparation, and allowing it to come to room temperature before serving improves the texture and flavor.
Ingredients
- 1 garlic minced, clove
- 2 teaspoon thyme leaves plucked and minced, fresh
- 1 lemon juiced
- 1 tablespoon honey
- 1 teaspoon salt
- ½ teaspoon pepper fresh
- 2 tablespoon sumac
- ½ cup olive oil
Instructions
- Add all of the ingredients to a jar and shake until the dressing is well combined and emulsified. Serve it with any salad. If storing for later make sure to give it another good shake before serving.
Notes
- Shake well before each use to re-emulsify the dressing, especially after refrigeration.
- Store the dressing in the refrigerator and bring it to room temperature for 20-30 minutes before serving for best flavor and texture.
- Use as a marinade for grilled chicken by letting it sit overnight or at least 5-6 hours before cooking.
- The dressing pairs with any salad, bringing a tangy, herbal brightness.
