Sweet Potato Casserole Recipe

Creamy and delicious sweet potato casserole topped with a crumble topping and pecans. Serve with your main meal during the holiday season.

Ingredients

Servings
  • 3 cups cooked mashed sweet potatoes - for canned use approximately 3 - 16 oz cans (drained and rinsed); if fresh, use about 5 medium sized potatoes.
  • 1/4 cup brown sugar
  • 4 Tablespoons butter
  • 2 eggs beaten
  • 1 teaspoon vanilla
  • 1/3 cup milk
  • Topping
  • 3/4 cup brown sugar
  • 3/4 cup flour
  • 1/2 cup butter softened
  • 1 1/2 cups Chopped pecans or walnuts optional

Instructions

  1. Preheat oven to 375 degrees F
  2. Spray 9 x 13 baking dish with non-stick cooking spray
  3. Cook sweet potatoes on stove top or drain canned sweet potatoes
  4. In a large bowl, mash the sweet potatoes and add brown sugar, butter, eggs, vanilla and milk. Beat until smooth
  5. Spread sweet potato mixture evenly into baking dish
  6. In a small bowl, combine brown sugar, flour
  7. Mix in butter to form topping
  8. Sprinkle on top of sweet potatoes
  9. Bake for 50-55 minutes or until golden brown and sweet potatoes should be set 
  10. Topp with nuts (if using) the last 25 minutes of baking
  11. Serve immediately
  12. Store leftovers in refrigerator 

Notes

  • Sweetener can be substituted for Golden Monk Fruit or an similar alternative.
  • Nuts can be mixed in the crumble topping if you would like.
