Description

This recipe starts by peeling and chopping sweet potatoes, roasting them covered with foil until tender to develop natural sweetness. Garlic is roasted alongside to mellow its pungency. After cooling, the sweet potato and garlic are blended with tahini, olive oil, lime juice, and salt, creating a rich, creamy dip. Ingredients

  • 2 large sweet potato or 4 cups, chopped
  • 2 cloves garlic
  • 2 tablespoons tahini
  • 3 tablespoons olive oil plus extra to drizzle on top
  • ½ lime juiced
  • ¼ teaspoon paprika
  • salt to taste

Instructions

  1. Preheat oven to 390℉/200℃. Peel and chop the sweet potatoes into bite size pieces and lay in an oven proof dish.
  2. Mince the garlic and mix with the sweet potato.
  3. Cover the dish with foil and bake for 30 mins, till tender.
  4. Remove from oven and allow to cool.
  5. Combine the roasted sweet potato and garlic with the tahini, oil, and salt and blend till smooth.
  6. Transfer to a serving dish, drizzle with oil and sprinkle with paprika. Serve at room temperature.

Notes

  • Store sweet potato hummus in an airtight container in the refrigerator for up to 2 days.
