Ingredients
- 1 clove garlic minced
- ½ teaspoon kosher salt
- ½ cup Tahini
- 3 tablespoons olive oil
- ½ lemon juiced, about 2 tablespoons juice
- cold water as needed 2 to 4 tablespoons
- 1 tablespoon chopped fresh cilantro or parsley, optional
Instructions
- Place garlic on a cutting board with salt. Using a fork, mash to a fine paste.
- Add garlic paste, tahini, olive oil and lemon juice to a bowl. Whisk until smooth.
- Add water as needed to reach desired consistency.
- Stir in a cilantro or parsley if using.
Notes
- If you notice your tahini is not smooth or it's grainy in texture, you need to add more water a bit at a time to smooth it out.
- To make dressing add more water to reach desired consistency.
- Homemade tahini will last about 2-3 days in the refrigerator in an airtight bottle or container.
